2 cups rice
4 cups chicken broth (from meat you have boil, can wet/dry mix either of them works)
3/4 can tomato sauce
1/2 cup or so off onions finely diced
before you boil the rice fry the rice in a little oil till it lightly browns add diced onions and about a can of tomato sauce, add either chicken broth from meat you have boil, canned what ever is easiest. mix real quick .make sure to taste the broth. let simmer until fully cooked. before you cover to boil you can add corn, carrots depends what you like.

Well, I wouldn't suggest Minute Rice even if it's brown if you can use use real regular brown rice instead.
You can flavor rice (or barley, or whole wheat couscous, etc) with all kinds of flavorings and other ingredients though! ...see below.
You might also want to look into legumes (lentils and beans) since they're highly nutritious, low calorie/low fat, and they can be dressed up in as many ways as rice and more.
I'd also suggest buying an inexpensive rice cooker too since that will make all of those things easier.

Quick and tasty spanish rice that is adaptable to your family
1 cup Uncooked rice
3 tbs. Vegetable oil
2/3 cup Diced onion
1 8-oz Can of corn drained
1/2 can Of "ro-tell" (optional)
1 tsp. Cumin
1 tsp. Chili Powder
2 tsp. Salt (optional)
1 tsp Garlic Salt
1/8 tsp. Saffron Powder
2 - 3 tbs. Water or chicken broth
Cook rice as directed on package.
Meanwhile, heat vegetable oil in large, deep skillet. Add onions and saute until clear. Add can of corn, "ro-tell", cooked rice and spices. Add water or broth one tablespoon at a time stirring after each addition until the rice is mixed through and yellow. Serve warm.
The "ro-tell" was my mother's idea, but my family does not like it so I usually don't include it. You can add whatever vegetables you want to this rice or even add diced chicken. This makes a lot and I usually freeze the left overs reheating them with 1/4 Cup water in a covered pot until the rice is tender.

Pick yourself up a bag of Vigo yellow rice (family size) and 1 large onion, 1 large green pepper, 1 red pepper, 2 medium sized garlic cloves, olive oil and some chicken broth. 1.) Dice onions and peppers, finely chop the garlic. 2.) Add olive oil to pan according to package. 3.) Add onions, garlic, peppers to pan on low heat, once the mixture begins to simmer, let it do so for 5 minutes. 4.) Instead of adding water as per instructions, use chicken broth instead. 5.) Bring the broth to a boil then add rice, boil for 1 minute then reduce heat to low. Cover and let cook for 25mins So , pretty much just follow the package instructions but add garlic, peppers, onions and chicken broth. (NO WATER) The rice tastes really good and ever better the next day. Try it and let me know how it turns out.

1 tsp (5mL) olive oil
1/2 (90g) cup diced onion
1/2 cup (75g) diced red bell pepper
1/2 cup (75g) diced green bell pepper
2 tsp (6g) finely diced jalapeño pepper
1 Tbsp (9g) chopped garlic
1 10–oz (285g) can tomatoes, diced
3 cups (720mL) chicken stock
2 tsp (5g) cumin
2 cups (400g) basmati rice
1/2 cup (90g) chopped green onions
2 tsp (2g) chopped fresh cilantro
1 tsp (6g) salt
1/4 tsp (1g) black pepper
Heat the olive oil in a large pot over medium heat. Add the onion, red and green bell pepper, jalapeño pepper, and garlic. Cook about 4 minutes or until the onion is translucent. Add the tomatoes, chicken stock, cumin, and rice. Stir gently. Bring the liquid to a boil, reduce the heat to low, and simmer for 15 to 20 minutes.
When the rice is finished, add the remaining ingredients and mix well. Serve immediately.

You have to use saffron as the primary choice and Tumeric (in the absence of saffron) as the secondary choice. These items color the rice yellow.

There are a lot of recipes online, but I made up my own to use with burritos. I use chicken broth instead of water to cook the rice. I add a can of Rotel tomatoes if I want it spicy or a couple of tablespoons of tomato paste if I don't. Easy peasy but very tasty.
